Spanish Quinoa - Recipe

This is a scaled-down version of this recipe, that I used to make stuffed peppers.

1/2 cup quinoa (I never rinse mine)
1 tbs extra virgin olive oil
1 clove garlic, minced
1 oz onion, chopped
1/2 tsp chili powder
1/2 tsp oregano
1/4 cup tomato sauce
1/2 cup vegetable broth

1. Sautee the onion and garlic in olive oil. Add the chili powder and mix. Stir in quinoa, and keep stirring for a few minutes.

2. Add broth and tomato sauce, and stir occasionally until it begins to boil.

3. Cover and simmer 10-15 minutes, or until liquid is just about completely absorbed.

4. Remove from heat and let the dish sit for 5 minutes. Before serving.

Damn. I wish you'd posted this earlier. I made these for lunch with the original recipe and I had a ton! I stuffed 7 peppers. I could have done 8 I think. I'm the only one that's going to eat them too. I hate that about my family. I have to buy food for just myself because no one else would eat what I eat.

Why didn't you just do half or a quarter of it? I rarely make an entire recipe because we'll eat it all in one sitting if I don't cook just enough.

I didn't know it was going to make so much. I was a quinoa virgin until yesterday. That was my first time.

I've never made more than 2 servings of quinoa at once. The directions on the box make a 4-serving dish, and I even had to cut that in half.

are you calling me a dumbass? LOL! No worries. I'll just be eating a lot of peppers for a few days. In fact, I just ate one. It was yummy!

LOL No! I'm saying it's hard to find recipes that are already scaled back for 1 or 2 people. A lot of times, I am the only one who will eat something in this house. Avocados? No one else will touch them (which is fine because I love them and could eat one no problem but shouldn't eat it all at once!). I had to buy a freaking calculator for my kitchen, just so I could get my portion sizes right. I'm totally going to start a "Meals For One" cookbook in my LC program, so everything will already be scaled so I can just make one of something. I can't really store leftovers all that well.

Yeah, I don't cook much. Hardly ever. So I don't think about stuff like that.

OMG, I love cooking. I spend hours every day just looking at recipes and crying because my kitchen sucks. It's too small and I have no counter/cabinet space. I'd be a much better cook if I had a bigger kitchen.
