Baked Oatmeal - Recipe

I tried baked oatmeal for the first time! It was awesome. Oatmeal is something I usually tolerate, but this stuff was really good.

2 c old fashioned or rolled oats
1/3 c brown sugar
1 tsp baking powder
2 tsp cinnamon
1 large egg
2 tbs canola oil
1 1/2 c skim milk
1/2 c unsweetened applesauce

1. Preheat the oven to 375 degrees.

2. In a medium bowl, mix the oats, brown sugar, baking powder and cinnamon. Set aside. In another bowl, mix the remaining ingredients. Pour the oat mixture into the liquid and stir.

3. Pour mixture into an 8x8 pan that has been sprayed with non-stick spray. Bake for 20-30 minutes.

4. Serve warm with chopped apples, nuts, raisins, etc.

Makes 6 servings.

I didn't run the numbers for it (though it's about 6 points+) but it gives one serving of healthy oil and a quarter dairy serving. I can see myself overeating this, that's how good it is.

I put the recipe on Sparkpeoples site because it looks so good and so I can put it in my tracker. For 6 servings it came out to be 176.5 calories, 2.1 g fat, 1.2 mg cholesterol, 127 mg sodium, 167 mg potassium, 38.8g carbs, 3.3 g fiber, 17.5 g sugar, and 6 g protein. I substituted eggbeaters for the eggs in my calculations though. I may sub Splenda brown sugar if I have some but that's what the breakdown was :) I don't like oatmeal and this sounds wonderful!

Thanks, Stacy! I was going to put it into Spark or my Living Cookbook software but was much too lazy. I swear, this is good stuff. I am not a huge fan of oatmeal - I eat it only so I'm not eating eggs all the time, but this was really good. I might try doing it in a muffin tin next time.
