Scallion & Tomato Egg Cups - Recipe

Breakfast is usually the same for me - an omelet with vegetables. The only problem is, it takes a bit of effort to put it all together, especially when I'm out of chopped vegetables. I prefer the grab and go meals. I hate prepping. So I gave these "muffins" a shot.

1 cup egg whites or egg substitute
2 large eggs
1 large tomato, chopped into small pieces
6 scallions, chopped fine
2 oz mozzarella cheese, but into 9 small chunks
salt & pepper to taste

1. Preheat the oven to 350 degrees F. Spray a muffin tin with nonstick spray.

2. Mix the egg products in a bowl. 

3. Stir the chopped vegetables. Add salt & pepper.

4. Pour the mixture into 6 of the cups in the muffin tin, staggering them to distribute weight evenly. Fill empty cups halfway with water.

5. Press one piece of cheese into each egg mixture.

6. Bake 20-30 minutes, or until a toothpick/knife comes out of the middle of a muffin "dry".

This makes 3 servings, each with 155.9 calories, 6.5 g fat, 6.4 g carbs (1.2 g fiber), 17.6 g protein. 3 WW points/Core+1

Egg Creams Using Egg Substitute

I made another batch of this using Egg Mates and skim milk. In my opinion, not as good as the first version. The lack of fat makes it less rich. It does kind of remind me of the Starbucks vanilla frappuccino though. My coffee might have been too strong. Anyway, the recipe and numbers:

1/4 cup egg mates
4 tsp Splenda
1/2 cup skim milk
8 oz cold coffee
ice cubes

75 calories
0 g fat
9 g carbs
10 g protein

I also didn't think there was any need to blend it. I just shook it up in a covered cup. Oh, and I threw in a few drops of Capella vanilla, as well as some sugar free vanilla DaVinci syrup.

Egg Creams - Beverage Recipe

A friend on Babycenter turned me on to this one. It's delicious!!!!

2 large eggs
4 tsp Splenda (or to taste)
2 tbs cream

Blend the ingredients above until frothy. Pour over:

8 oz cold coffee
ice cubes

Here are the numbers, using light table cream and granular Splenda:

211 calories
16 g fat
5 g carbs
12 g protein

I also used some Capella Flavor Drops in it, and it was wonderful!!!

You could probably use just egg whites/substitute and skim milk. I may try that tomorrow.

Light Deviled Eggs

Here's something I threw together this morning. It was really, really great!

3 hard boiled eggs
2 tbs light mayonnaise
2 tbs low fat cottage cheese
1 tsp dill weed

Slice the eggs lengthwise, discard 1 of the yolks. Mash the other 2 yolks in a bowl. Add mayonnaise, cottage cheese, and dill weed. Scoop into egg whites. Eat!

Per entire recipe:
294 calories
10 fat
6 carbs
16 protein
